In order to maintain the strong characteristics of Shanli, the distillery only uses it three times and reassembles it to minimize the impact of the barrel on the wine.
The whiskey produced by SAWAKI has a strong smoked peat. The influence of the soil is relatively little from the process of wheat planting to fermentation and distillation. Many of the mineral flavors come from the aging environment, such as the sea breeze on the beach. Known as the single malt whisky that best reflects the style of Japanese brewing, many connoisseurs even admire it as the king bottle of Japanese whiskey.
