Colour: Clear, light amber with golden flecks.

Aroma: Orange spiced tea, fresh cut apples, and cherries first. The nose does not overpower.

Palate: Delicate floral flavors, with sleek notes of vanilla, the wood tied powerfully well, a fine interplay of fruit and acidity laced with a touch of licorice.

Conclusions: A finesse to the Cognac for its age, with a lengthy finish.

Editor Choice: Although it might be the youngest of the entire Delamain range, the Delamain Pale and Dry XO has been matured for a quarter of a century to produce a very fine and elegant Cognac. With a distillate from Ugni Blanc and Colombard grapes, it comes from the Grande Champagne - also known as the Premier Cru. 

Aged on average for 25 years, the Pale & Dry XO Cognac is known for its pale color that is much lighter than you'd expect of a Cognac of this age. This is due to the natural phenomenon of the eaux-de-vie being matured in very old casks. The word 'dry' is somewhat of a paradox, because it's actually referring to the natural sweetness of the liquid.

The end result, however, is a Cognac that's truly round, intense, and mellow. It offers a real depth of character, combining delicacy with amazing fruitiness. If you enjoy a Cognac that's truly flavorsome, with good rancio, then give this one a try. A pure Grande Champagne blend, this is certainly a bottle that will hold its head up high at the smartest of gatherings.

They mature under optimal conditions in old barrels. The distillation is carried out gradually. Eaux-de-vie of the same age is then blended. The four factors all play a significant role - 25% being the distillate; 25% the barrel; 25% of the cellars and 25% the time taken. A fine assemblage aged over many years.
