Description: 30% of the wine is produced by carbon dioxide fermentation to extract the most possible fruitiness and freshness. The finalised wine is stored for 10 months in concrete tanks and then for at least two months in a bottle.
Tasting Notes: The nose is dominated by red berries, mainly strawberries, and red currants, which develop in some complex expressions with the aeration in the glass. The tennis are young but provide a smooth mouth feel. A final dominated by cherries and spices.
Food Pairing: To pair with most dishes, preferably with Provencal touches such as lamb with rosemary and thyme.
