Editor Choice: The concept which defines this wine is of a production process unhindered by regulations, but based on very careful selection of the best terroirs and Tempranillo vines from gritty soils found in the alluvial lands of the Duero region. This grape produces very aromatic, full-bodied wines with intense colour and good backbone, but still packed with freshness and intense flavour. The Syrah grapes, present in the blend in no more than 15%, add greater structure and complexity.
During the harvest, the date of which is set by the Riscal technical department, only ripe tempranillo grapes which have received plenty of sunshine are accepted, and these are packed into crates with a maximum capacity of 15 kilos so as to make sure the skins are not broken by handling. The temperature of fermentation is controlled at a level between 22ºC and 24ºC, with short maceration times and periods of just a week in the vat. Malolactic fermentation takes place in the vat.
Food pairing: This wine goes well with ham, cheeses which are not too mature, casseroles with mild sauces, stewed pulses and hotpots, poultry, red meat, roasts and grills
